Junior Culinary Foundation and Junior Pastry and Baking

The Junior Courses are programs that teach hands-on food preparation skills designed for kids ages 11-18. For children and teens who derive fun out of cooking in the kitchen, the course teaches them how to whip up scrumptious and nutritious dishes alongside a small group of playmates and peers.

 

COURSE OBJECTIVES

At the end of this course, the participants will be able to:
• Understand potential hazards in the kitchen, and comfortably work while
keeping safety as the main priority
• Learn the importance of nutrition to promote healthy eating
and a healthy lifestyle
• Learn simple cooking techniques to prepare them for more advanced
skills in the future
• Have fun in the kitchen and gain new friends along the way

Junior Culinary Foundation Course

Day 1 | Knife Skills
To give students a confidence in using proper equipment and knives in the kitchen
A. Basic Cuts
B. Cream of mushroom soup
C. Pommes Frites
D. Ratatouille - like the movie

Day 2 | Basic Cookery
Introduction to different meal courses. Student will also get a chance to test and cook different courses
A. Appetizer - Cheese Samosas
B. Soup or Salad - Cream of Vegetable Soup
C. Main Course - Spaghetti Carbonara
D. Dessert - Panna Cotta

Day 3 | Chicken Cookery
Introduction to poultry and hands-on pre-work and demo cooking
A. Country Fried Chicken
B. Chicken Fingers
C. Risi e Bisi (Basmati rice cooked with chicken stock)

Day 4 | Meat Cookery
Introduction to beef & pork hands-on pre-work and demo cooking
A. BBQ pork
B. Grilled Beef Salpicao
C. Mashed Potato

Day 5 | Seafood Cookery
Introduction to seafoods and hands-on cooking
A. Clam Chowder
B. Seafood Rice
C. Fish en Papilotte

It's the kids' turn to make (or bake) breakfast! Participants will learn
how to make morning specials like CARROT RAISIN MUFFINS, BEN'S SPECIAL
COFFEE CAKE and BLUEBERRY OATMEAL PANCAKES.

Day 2 | 21 August 2010 | TBA | Toss that Pizza
A class on an all time-favorite. Participants will make CLASSIC PEPPERONI
PIZZA, CHICAGO STYLE DEEP-DISH PIZZA, SUMMER GRILLED PIZZA.

Day 3 | 28 August 2010 | TBA | Dress Up Your Cake
Kids can make their or someone else's own special birthday cake.
Participants will learn how to make a CLASSIC CHOCOLATE CAKE, decorate it
with WHIPPED GANACHE and serve it with CARAMEL SAUCE.
