This Course serves as an Introduction the World of Culinary Arts at the Professional Level. The student is introduced the basics of running and working in a Professional Kitchen. Additionally, the student is introduced to each of the basic ingredient groups ( purchase, storage, fabrication and hygiene) ( Vegetables, Grains, Poultry and Meat, Seafood, Dairy, Eggs). The recipes executed in the kitchen include working with these ingredients and producing dishes basic to the Professional Cold Kitchen: Salads, Sandwiches and GardeManger. Both Traditional and Modern Presentation of these Classic Dishes are Introduced and executed by the students.
