Course Description

The WSET Level 2 Award in Spirits is intended for people who have little or no prior knowledge of spirits. It is intended to provide a comprehensive level of focused product knowledge required to underpin job skills and competencies – for example, in bar service, and for staff requiring focused product knowledge in retail and wholesaling businesses. Successful candidates will be able to give information on the characteristics of the principal spirits and aromatised wines as well as their methods of production. They will confidently provide guidance on the use and service of spirits and make informed recommendations to customers when selecting spirits and liqueurs to meet their taste and price requirements.

What you’ll learn

  • How to taste and describe spirits using the WSET Level 2 Systematic Approach to Tasting Spirits ® (SAT)
  • The techniques used during the four stages of spirits production: processing the raw material, alcoholic fermentation; distillation; and post-distillation operations
  • How techniques used during the four stages of production determine the style of a spirit
  • How aromatised wines are made
  • How a balanced cocktail is made and examples in four notable cocktail families (the spirit-forward, the short sour, the highball and the long sour)
  • How local production traditions, coupled with local laws, are used to create different styles of spirits in the following categories:
    • fruit spirits
    • whisky/whiskey
    • sugar cane spirits
    • Tequila and Mezcal
    • vodka
    • flavoured spirits (spiced rum, flavoured vodka, gin, aniseed spirits, bitter spirits/amaro, cocktail bitters, liqueurs)

2. I have not taken WSET Level 1 Award in Spirits. Am I qualified to enroll in WSET Level 2 Award in Spirits?
No, WSET Level 1 Award in Spirits is not a prerequisite to take WSET Level 2 Award in Spirits.
3. How many hours per day are the face-to-face classes?
For Level 2 Qualifications, there will be a total of 18 contact hours for the 3-day classes.
4. Does the course have a certification exam?
Yes, the exam is taken on the scheduled examination date. The duration of the exam is one hour.
5. What is a remotely invigilated exam?
Remote invigilation allows students to take their exam on a computer, and they will be monitored via webcam, screen sharing technology, and a secondary recording device (e.g. smartphone).

Program Faculty

Bel S. Castro

Ms. Bel S. Castro is one of the founding faculty members of Enderun Colleges and is currently Asst. Dean of the College of Hospitality Management. She oversees all wine programs offered by Enderun Extension. In addition to holding a Level 3 Award in Wine & Spirits from the Wine & Spirit Education Trust (UK), she has also successfully completed the WSET Wine Educator’s Programme. Her academic credentials include a degree in Restaurant Operations from Le Cordon Bleu in Australia and a Master of Arts in Gastronomy, a double-badged program of Le Cordon Bleu and the University of Adelaide in South Australia. Her personal interests are centered on food history, cuisine, and culture. Her research in these fields has led to invitations to present her work on several occasions at the Symposium of Australian Gastronomy, and also at the prestigious Oxford Symposium of Food and Cookery.
